The changes I've made include using only one-half stick of butter and 1/4 cup applesauce to lighten up the fat (no one is the wiser) and using 3/4 cup of AP flour and 1/4 cup whole wheat flour. My recipe also calls for a sprinkling of fresh lemon juice over the plums and batter before putting on the cinnamon and sugar. Because we have a lot of plums each year, I bake several and freeze them (they freeze beautifully, just thaw and heat at 325 for about 20 minutes) - line the springform pan with a double layer of foil, spray lightly with oil, cool, wrap and freeze. It is my favorite mixing tequila, and offers a very pleasant balance between the agave oak and rich earthiness AND it won't have you hurting the next day (unlike Jose Cuervo, which I avoid at ALL costs because 1. it battles the subtleties of the other ingredients, and 2. is 9 out of 10 times the culprit for many people never being able to drink tequila again.<br /><br />For an added brilliance, add a couple of sprigs of fresh basil or mint before shaking.
